Elder flower tip

Elderflower is growing everywhere, this is the time to make elderflower wine, the flowers have lots of natural yeast. leaving  in water with sugar, 10% weight of flowers, and 5 ltr water per Kg of flowers, 5 days ambient temperature the leave in fridge for 2 more days. poor through a sieve/muslin and leave in fridge, one can taste the already fizz in the stock, this will get stronger in time. great for a BBQ evening with some friends. Any left over’s, turn it into a syrup by bringing to the boil with 500 gr sugar to 1 ltr of liquid and reduce to half amount. cool and store in a sterilised kilner glass, ready to use for puddings or a cool drink........ enjoy
