Great day today, warming up for Ludlow Food Festival....good time to have a photo shoot for a magazine. Ellie and I spend 1 hour to get 3 courses ready for a magazine write up, Hussey salmon, Pork 3 ways and Strawbery symphony, First time for her to be involved on the front line, a little nervous but soon got the hang of it. All about focussing and timing, I can’t say it often enough during service or on Demo's or were ever else...one day I don’t have to say it anymore I hope. It was a good trial not only for today but also for the Ludlow event, all about team work and focus and timing......that way you create enough time to have fun too in doing it all. I so look forward to this weekend, been waiting for years to get this opportunity. A nearly finished dish I managed to get a picture of, Hussey Cured and Smoked Salmon....keep it plain and keep it clean, let the flavours do the talking...
